Introduction:
Food preservation is maintaining food from spoiling after harvest or slaughter. There are several different methods to preserve food, but some of the ways we preserve food everyday is using the refrigerator. Food preservation has been practiced since the prehistoric times. But through time, the skills and techniques of preservation has developed and in the modern world, you will be able to see both negative and positive effects of the development of food preservation. A negative result of the food preservation nowadays is using preservatives which contains bad chemicals for our body. Some examples of the methods of preservation in the past are drying, refrigeration (without the use of refrigerators, but usually used store them underground), and fermentation. These old methods have evolved and influenced the methods we use today, we still use some old methods though. These modern methods include canning, pasteurization, freezing, irradiation, and use of chemicals. Packaging has played a big role in preservation in the modern world. If food preservation wasn't as developed, we wouldn't be able to pack lunch like we do, buy food as convenient as these days, and also we might not have been able to eat fresh food. Food preservation has made it possible for people in different areas try new and different food and also let them have access to healthy food which are required for intake in a healthy person's body. People these days use the refrigerator to store food without it spoiling. The refrigerator is able to do this because it stores the food in a low temperature. When the food stays in a cold environment, there is less chance of bacteria forming in the area. Which means that placing the food inside the freezer will keep the food fresher and will stay fresh longer than if the food is kept in the refrigerator

Short History / Background:
Food preservation has been practiced since the prehistoric times. Our ancestors has been preserving food from their time with old methods since they didn't have the refrigerator at their times. They would usually place the food underground to keep the food cool and also ferment it. Early Koreans also used the underground method to preserve, ferment, and keep their food for long periods of time. Fermenting was also a way to preserve the food. The early Europeans also used the method of fermenting milk to get yoghurt. This is basically leaving the milk in room temperature for a long time so the milk will rot and therefore become yoghurt through this, fermentation. Also, salt was used to preserve food and make it fresh in hot weather and long periods. That is also a reason why Filipino food is salty. The Philippines is a tropical country and is summer all year long. Since the very first locals, they made their food salty, so their food will at least last longer despite the hot weather. Also, in the western countries, they would place the food in vinegar. This nowadays creates pickles. There are several types of pickles. They use different types of vegetables, beans, and more and keep them submerged in vinegar. This creates pickles. These old methods may still be used today, but are kind of not as hygenic, so there are variations, and improved ways of the old methods that the people today use. After the refrigerator was invented in 1834, people around the world has been using the refrigerator everyday. Now, almost every household you can find has at least one refrigerator.
Importance & Purpose
Food preservation is extremely important for humanity. In order for a human to live, they need to eat. A person needs to eat breakfast, lunch, and dinner everyday to stay healthy. In the stone age, people didn't have jobs like the ones we have today. So they could get the food for their meal that same day. People these days have jobs and responsibilities since a controversial thing called "money" got invented and took over and changed man-kind. This means that people can't go and hunt for a pig for lunch and go to work a few hours after. People these days are very busy, they need food served very fast specially people with jobs. This is why restaurants, fast-food chains, supermarkets, and packaged food factories exist today. Barely anyone in the planet goes into the wild to get their own food. In order for food to be pre-packaged or made fast, the refrigerator can't be ignored in the process. Because the refrigerator exists today, we are able to go to work and take care of our meals in a matter of an hour or less. This has made man-kind way more productive, but it also has a side-effect. This created a necessity for chemicals to be used in packaged food. When preservatives are placed in food and fruits, this all goes to our bodies. This causes illnesses that people didn't encounter frequently a long time ago before we started having preservatives in our food.
